My kids recently discovered that they really like Chipotle (Score!!). My daughter likes the carnitas, so I figured I would try to recreate it (somewhat) and see how it would go over. Surprisingly, they loved it!!
2-1/2 pounds of pork shoulder, trimmed of excess fat
1 medium onion, roughly chopped
1 cup low sodium chicken broth
Latin Seasoning (preferably orange flavored- can be found at Whole Foods. If you can’t find it, simply make your own: kosher salt, dried orange peel, garlic powder, onion powder, cumin, and Mexican oregano)
1/2 orange cut into chunks, with peel
1 bay leaf
1 tsp Mexican oregano
1/2 tsp cumin
Chopped red onion
Chopped red radishes
Add the onions to the bottom of a dutch oven or large cast iron skillet. Place chunks of pork over the onions and season with the seasoning mix. Place oranges in the pan. Just cover with chicken broth. Cover and cook on low for 2-1/2 – 3 hours, or until pork is easily shredded. Garnish with radishes, red onion and cilantro.
Serve with rice, beans, chips & guac! Buen Provecho!!
