Whether you think you like dates or not, you will LOVE these bacon wrapped dates stuffed with goat cheese.
It is the best three ingredients ever combined: a little savory, a little sweet. These make a great appetizer to bring to a holiday party. Cook them ahead of time and just reheat when you get there!
1 lb bacon
9 oz pitted dates
4 oz goat cheese log
Preheat oven to 425°.
Cut a slit in dates lengthwise. Stuff with about 1/2 tsp goat cheese each.
Cut bacon slices in half and wrap the dates in the bacon.
Place, bacon seam side down on a foil lined baking sheet and bake for 15 minutes or until bacon is to your desired doneness.
Remove from baking sheet and place on a paper toweled line dish to drain the bacon fat a bit (a minute or two).
Let cool before devouring!!
